Latina Nutritionist Is Activist For Healthy Living

As a young child, Maria Alamo, President of Salud Consulting, considered being a neuroscientist or medical doctor. “I was a psychology and biology major at Tulane University. During my senior year, I took a nutrition course and that changed my career plans for my future,” she said. Ms. Alamo earned her master’s degree in Public Health and became a licensed dietitian and nutritionist.

Born in Madrid, Spain, Ms. Alamo lived in Puerto Rico, San Antonio, Tex., and Alexandria, Va. “My father was in the military when I was a child and we moved from place to place with him,” she said.  Ms. Alamo moved to Evanston 20 years ago when she accepted a position with Kraft Foods. “I adapted Kraft’s marketing materials for Hispanic cultural relevancy and assisted with translating the science of nutrition from the plate to the promotion of wellness,” she said.

As a nutritionist, Ms. Alamo has been called upon to collaborate with leading chefs from the American Culinary Federation. “The field of nutrition has evolved over the years, specifically in the area of nutrigenomics.” She explained nutrigenomics to be a branch of nutritional genomics, which is the study of the effects of food and food constituents on gene expression. “I integrate a holistic approach to my work that uses food as preventative medicine for the prevention of chronic illness,” she said.

Ms. Alamo actively works to educate and empower communities to eat better and locally. As a volunteer for the Edible Farm and Edible Evanston 150 Gardens she helped raise community awareness about healthy living. “Childhood obesity is a serious issue. Staying informed with nutritional science can make a difference in our lives.”
